3 ingredient almond butter cups

 

I have modified my diet for the time being since it helped my daughter tremendously with various health issues. She is still breastfeeding and so I have continued the diet. I am dairy-free, gluten free, soy free and oat free and all of these different food groups have had an impact on her health (including re-occurring ear infections, swollen adenoids, eczema, and digestive problems) when taking them out (more details in future blog post).

I love me some good ole sweets and was trying to think of creative ways to satisfy my chocolate craving since most store bought chocolate contains soy. You probably have all the ingredients in your pantry! This recipe is easily customizable as well. The one thing that makes these look like a store bought almond butter cup is the silicone mold. I found mine at hobby lobby year ago, but I’m sure can also be found on Amazon(picture attached below). This takes about 5 minutes to assemble and then some time to set in the freezer, and then you’ve got a clean, yummy chocolate treat!

Ingredients:

1/2 cup chocolate chips (I use the mini organic dark chocolate chips from Thrive- link below*)

Almond butter ( about 2-3 TBPS I’ve never measured just taken it from the jar)

1-2 tsp Refined coconut oil

Directions:

Pour chocolate chips and coconut oil in a microwavable bowl.

Microwave for about a minute in 30 sec increments so your chocolate wont burn

mix the melted oil and chocolate together

take a spoon and pour a little bit to fill about 1/3 of the way in each “cup”

take the almond butter (also warmed if too hard to pour) and fill leaving a little room at the top

take the remaining chocolate and top each “cup”

Set in the freezer to harden- I find that 12-24 makes sure they are full hardened and wont stick to the silicone mold but sometimes I just cant wait that long and they are delicious even after a few hours.
