Homemade Marshmallows

 

Grass-fed gelatin can be a great addition to your diet, especially if the meats you consume are boneless, skinless and don’t contain much fat. Most of us don’t eat nose to tail anymore and we miss out on essential amino acids. While things like meat stock and broths are a complete protein, supplementing with gelatin can be a quicker easier way to make sure you have a balanced diet. There are so many fun things to do with gelatin but making marshmallows is one of my personal favorites. My kids just snack on them straight but I love to put them on my coffee topped with a little cinnamon.

Gelatin is a good source of protein, it contains essential amino acids like glycine which helps with collagen synthesis. It can help repair the integrity of gut lining, aid in sleep and relaxation, and is anti-inflammatory just to name a few! So if I havnt convinced you already, then let the marshmallows speak for themselves and try this out!

Ingredients:

30 g gelatin, I used grass-fed

240g Cold Water

200g Organic Cane Sugar

¼ tsp Sea Salt

2 tsp Vanilla Extract

¼ Cup organic powdered sugar, For coating and to prevent sticking (optional)

Directions:

Line a 9x13 or any baking pan with parchment paper

Add about 2/3 of your water into a mixing bowl.

Very slowly sprinkle the gelatin evenly over the water and watch it turn to brains! Let that sit.

While the gelatin blooms, add the remaining water, cane sugar and salt into a small saucepan. Turn heat to medium until hot but NOT boiling. Remove from heat.

Begin whisking the gelatin mixture on slow with your mixer. Once mixed a bit start slowly pouring in your hot liquid.

Turn mixer on high and keep whisking for about 5 minutes or until the texture is soft and not quite forming peaks.

Just before stopping, mix in the vanilla extract. You should have gained a lot of volume and have a white fluffy mix.

Immediately pour into your lined pan and leave on counter for 2+ hours or in fridge for 1+ hour.

Cut and mix with powdered sugar if desired and store in an airtight container for up to 2 weeks.

Add to all of your favorite warm cozy drinks or hand them out as snacks!
