Quick Instant Pot Beef ramen bowls (gf,df,sf)

 

Looking for an easy, minimal prep, healthy weeknight dinner? This meal is one of our favorites and is on weekly rotation. It is dairy, gluten, soy and egg free and most of the ingredients can easily be swapped out for what you have in your pantry.

Ingredients:

1-2 lbs grass-fed ground beef

1 package coleslaw

2 cups shredded carrots (can also buy in a package to save time, or omit)

4 cups chicken broth

1/3 coconut aminos *see note below

2 garlic cloves

1 tsp salt

3-4 pieces of brown rice ramen *see note below

Directions:

Brown ground beef until fully cooked in skillet or on saute function in instant pot.

Add all ingredients except ramen noodles into instant pot.

Cover and push valve to sealed position. Pressure cook on high for 3 minutes.

Release pressure once time is up.

Press soup button on instant pot and get the liquid to a boil.

Once boiling add in your ramen noodles and cook according to the instructions on the package.

Top with siracha sauce for some extra kick!

Serve hot and enjoy!

Swaps:

*soy sauce can be used in place of coconut aminos. If soy sauce is used, reduce or omit salt and add 1 tsp brown sugar.

*we use gluten free brown rice ramen noodles but any ramen noodles will work here. Just follow the instructions on the package.
