Protein sheet pan pancakes for Aldi Shoppers!! (w/substitutions)

Ingredients:

  1. 1 cup of you’re favorite pancake mix! ( we use the gluten free pancake mix at Aldi which is very affordable ). Just follow the directions on the box- I’ve listed the Aldi gluten free box directions below and give some ideas for alternatives!

  2. 1 scoop Protein powder of your choice (we use Equip chocolate protein powder) for an extra 20 grams of protein!

    *for even more protein add a serving of grass fed collagen. We use this one.

  3. 1 egg or egg substitute if needed. We use Bobs Red Mill egg replacer from Thrive for my sons version. (use this link for 40% off your first order!)

  4. 1 cup of water or any milk or milk alternative

  5. 2 TBPS oil ( we use avocado or olive oil)

  6. 2 tsp vanilla *optional

  7. 1 tsp cinnamon *optional

Directions:

  1. Mix all ingredients together in bowl. This recipe is very easy to get creative with or use swaps. Don’t have protein powder? No worries! Have extra fruit to use up? Mix it in! (may need to adjust the baking time a bit for fruit).

  2. Pre-heat oven to 425 F and line a pan with parchment paper. I used a 9 x 13 and an 8 x 8. They both worked, I just adjusted the time for the thicker pan.

  3. Pour mixture into pan and bake for about 10-15 minutes. my 9 x 13 pan took 10 minutes and my 8 x 8 pan took 15 minutes.

  4. Cool and enjoy with some fresh maple syrup!
